I don't know much about X5 stuff really.
But I imagine 7,8,9 would be easy to work with, as it wont be able to shift down, and wont be able to go up due to limit screws.
On my x.9, I left the shifter and derailleur set as it was when i had 9 speed on and fitted it the spacers, and adjusted limit screws. The only difference between doing this and setting it at 7,8,9 is that I can still shift down on the shifter (mech doesn't move due to limit screws) so it just lengthens the cable just before it attaches to the derailleur.
Ideally, set to 7,8,9, but that may mean your cassette has to be reasonably far right, depending on the limit screw settings.
I'll get some pics of my set up sometime tommorow for you, should help to explain some things.

What do you mean by the different areas of the shifter? Do you mean where the cassette cogs are placed on the freewheel?
